What is Lumpia?
Lumpia is a Filipino version of spring rolls. It can be served fresh and fried as well. You can taste it in many forms, both savory and sweet. Lumpiang Shanghai is known for its pork meat filling with different seasonings and vegetables wrapped in thin spring roll wrappers. Then Fried for a perfect crisp.
It’s mostly like a Chinese egg roll, but the difference is that it is thin creep. This Creepe used in lumpia Shanghai gives perfect crunch, which can serve as a snack or appetizer.

Despite the name of the dish, it does not originate from Shanghai or China. It is a Filipino version of Taquito; its name is derived from two Hokkien words, lun meaning moist and pia meaning pastry.
Recipe of Lumpiang Shanghai
- Preparation Time: 20 minutes

Ingredients
- Spring roll wrappers: Thin and delicate, these give lumpia its signature crispness.
- Filling:
- 1 lb ground pork
- 3 tbsp garlic, minced
- 4 tbsp carrots, minced
- 2 tbsp yellow onion, minced
- 2 tbsp light soy sauce
- ¼ tsp ground pepper
- 1 tsp salt
- Egg wash: 1 egg, beaten, to seal the wrappers.
- Neutral cooking oil: Vegetable oil is used for frying.
How to Assemble Lumpia
- Prepare the filling:
- Mix all ingredients, like ground pork, garlic, onions, carrots, soy sauce, pepper, and salt, in a large bowl. Use your hands to combine thoroughly.
- Take a small portion of the filling and keep it in the microwave for 10-15 seconds to taste the spices. Then, adjust the seasoning if needed.
- Peel the wrappers:
- Defrost spring roll wrappers completely before peeling. Keep them covered with a damp cloth to prevent drying out.
- Roll the lumpia:
- Lay one spring roll wrapper on a flat surface. Place about three tablespoons of filling on the bottom half of the wrapper and form it into a log shape.
- Roll the wrapper over the filling tightly, fold the sides inward, and continue rolling until you have about two inches left at the top.
- Brush egg wash on the top edge and finish rolling to seal the lumpia.

How to Fry?
- Heat the oil:
- In a heavy-deep pot, heat oil to 375°F.
- Use a thermometer to measure the right temperature.
- Fry the lumpia:
- Now, Carefully add the lumpia to the hot oil.
- Add 5 to 6 in a batch or according to your pot size.
- Fry for about three to four minutes or until golden brown and crispy.
- If the internal temperature of the lumpia reaches at least 165°F, ensure the filling is cooked.
- Drain the oil:
- Once you fill the rolls, keep them on a rack lined with paper towels to absorb excess oil.
- Keep doing it for all batches.
How to Make Lumpia in Advance
Sometimes, we want to prepare lumpia ahead of time. It saves us time. We prepare and freeze them uncooked. But some key points to make them save perfectly.
- Freeze: Place uncooked lumpia in a single layer in a Ziplock bag and freeze for up to a month.
- Fry frozen lumpia: When ready to cook, fry them directly from the freezer. Be careful of oil splashes caused by ice crystals!
